4.将加入高汤后的砂锅放到火上烧,同时要注意观察,当砂锅周围开始大量冒泡时,就能关火端锅了,不要等到高汤完全烧开。因为砂锅是聚热的,当砂锅里的高汤还没有完全烧开时,端锅,等上桌时,利用砂锅上的余热,刚好将高汤完全烧开。如果等砂锅里的高汤完全烧开了再端砂锅,这时,砂锅里的高汤以及漂在最上面的土豆粉就会溢出。
5.在砂锅最上面,撒入一些香菜,再放入几个素丸,这碗香辣土豆粉就做好了。
