《红楼梦》作为中国经典的四大名著之一,也是曹雪芹笔下最为经典的明清时代的真实写照,但是这不旷世奇书所记载的文化,也成为了后是流传的经典之作,特别是书中所载的“红楼食谱”,也是中国餐饮文化的精髓,传承至今。《红楼梦》中的吃是一绝,现在把书中的一些食谱整理出来,以飨读者。

1、火腿炖肘子

——《红楼梦》摘录:

贾琏向桌上拣两盘肴馔与他放在杌子上自吃。凤姐又道:“妈妈很嚼不动那个,倒没的硌了他的牙。”因向平儿道:“早起我说那一碗火腿炖肘子很烂,正好给妈妈吃,你怎么不拿了去赶着叫他们热来?”又道:“妈妈,你尝一尝你儿子带来的惠泉酒。”(第十六回)

——考证分析:

火腿炖肘子,清代名菜,今镇江、扬州一带仍行此食,美其名曰“金银蹄”,亦称“煨火肘”。《北砚食单》上说:“煨火肘:火腿膝湾配鲜膝湾,各三副同煨,烧亦可。”“金银蹄:醉蹄尖配火腿煨。”这是一只火工菜,口感要酥烂,适合老年人食,故王熙凤用以招待赵嬷嬷。

——制作方法:

用火腿肘子(南方叫“蹄膀”)与鲜肉肘子合炖,食盐调味,少加酒糖,炖极烂。

2、火腿鲜笋

——《红楼梦》摘录:

晴雯麝月揭开看时,还是只四样小菜。晴雯笑道:“已经好了,还不给两样清淡菜吃。这稀饭咸菜闹到多早晚?”一面摆好,一面又看那盒中,却有一碗火腿鲜笋汤,忙端了放在宝玉跟前。宝玉便就桌上喝了一口,说:“好烫!”(第五十八回)

——考证分析:

火腿与春笋合烹,其滋味特佳,扬州人称“一啜鲜”。我国明清时江南就有火腿炖鲜笋的食俗,贾府非常讲究,用火腿来烹,自然比普通咸肉多了几分贵气。火腿即火肉,用猪腿腌熏而成。《遵生八笺》中说:“火肉,以圈猪方杀下,只取四只猪腿,乘热用盐,每一斤肉盐一两,从皮擦入肉内,令如绵软,以石压竹栅上,置缸内,二十日次第,三番五次用稻柴一重一间重叠起,用稻草烟熏一日一夜,挂有烟处。初夏水中浸一日夜,净洗,仍前挂之。”火腿鲜笋汤在清代中叶,是高档食品,《调鼎集》上说:“上席……冬笋火腿汤。”明清时食火腿鲜笋汤是江南食俗。古人重养生之道,病者不可吃油腥的肉食和乾硬的冷食。所以宝玉病中,吃的只是清茶淡饭。火腿与春笋合烹,其滋味特佳,扬州人称“一啜鲜”,故宝玉急急地端起来就喝,被热汤烫了嘴。

用好火腿、好汤、鲜笋或玉兰片(即好笋干)配绿色蔬菜,按常规烧汤。

3、糟鹅掌鸭信

——《红楼梦》摘录:

宝玉因见他外面罩着大红羽缎对衿褂子,因问:“下雪了么?”地下婆娘们道:“下了半日雪珠儿了。”......这里薛姨妈已摆了几样细茶果来留他们吃茶。宝玉因夸前日在府里珍大嫂子的糟鹅掌鸭信。薛姨妈听了,也忙把自己糟的取了些来与他尝。宝玉笑到:“这个须得就酒才好。”(第八回)

——考证分析:

糟鹅掌,糟制菜肴为江南食俗,由来已久。五代时僧人谦光说:“愿鹅生四掌”,言其极嗜此食。雪芹之祖父曹寅亦爱食此类物,其《药后除食忌谢方南董馈炸鸡二品,将有京江之行》有句“百嗜不如双跖羹”,也是这个意思。看来,此亦为曹家之食。糟鹅掌用的是熟掌,《宋氏养生部》说:“糟:熟鹅、鸡同掌、跖、翅、肝、肺,同兽属。鹅全体剖四轩,糟封之,能留久,宜冬月。”宝玉食糟鹅掌之时,外面已下了半日雪珠儿了,说时此食正当其时。童岳荐《童氏食规》说:“糟鸭舌,冬笋片穿糟鸭舌。”苏州亦行此食。清·袁栋《书隐丛说》说:“其宴会不常,往往至虎阜(即虎丘)大船内罗列珍馐以为荣。春秋不待言矣,盛在夏之会者,味非山珍海错不用也。鸡有但仍很多,如琵琶鸭舌、烩鸭舌掌、瓢儿鸭舌、糟鸭舌等等。

——制作方法:

糟鹅掌鸭信是一种美食,主料有鹅掌、鸭舌,将鹅掌及鸭舌煮熟,剔骨,用鸡汤加盐复煮,捞出后用香糟汁或糟油糟食。

4、野鸡崽子汤

——《红楼梦》摘录:

王夫人又请问:“这会子可又觉大安些?”贾母道:“今日可大好了。方才你们送来野鸡崽子汤,我尝了一尝,倒有味儿,又吃了两块肉,心里很受用。”(第四十三回)

——考证分析:

清袁枚《随园食单》中“野鸡五法”大略介绍了这两种吃法:“野鸡披胸肉,清酱郁过,以网油包放铁奁上烧之,作方片可,作卷子亦可,此一法也。切片加作料炒,一法也。取胸肉作丁,一法也。当家鸡整煨,一法也。先用油灼,拆丝,加酒、秋油、醋,同芹菜冷拌,一法也。生片其肉,入火锅中,登时便吃,亦一法也,其弊在肉嫩则味不入,味入则肉又老。”

——制作方法:

“崽子”即仔鸡。切块,过油,加黄酒、食盐、葱姜,用好汤代水炖之,炖极烂出锅。

5、酒酿清蒸鸭子

——《红楼梦》摘录:

说着,只见柳家的果遣了人送了一个盒子来。小燕接着揭开,里面是一碗虾丸鸡皮汤,又是一碗酒酿清蒸鸭子,一碟腌的胭脂鹅脯,还有一碟四个奶油松瓤卷酥,并一大碗热腾腾碧荧蒸的绿畦香稻粳米饭。(第六十二回)

——考证分析:

酒酿,即江南人所谓酒娘。《调鼎集·白酒娘》中说:“白糯米一斗,夏日用冷水淘,浸过夜,次日捞起蒸熟,不要倾出,用冷水淋入甑内至微温为度,倾扁缸摊凉。用白酒药三粒,捣碎如粉,拌饭铺平,饭中开一锅穴,再用碎白药一粒。糁匀窝穴四周。其缸用包袱盖好。三日,其窝有酒,即成酒娘。”清蒸,指不加其它配料,不用浓重调味品,以主料略加调味蒸制而成。凡清蒸菜,都特别讲究原料之新鲜。鸭馔,为乾隆宫廷御膳常物,种类甚多,如炒鸡白鸭子杂烩、燕窝八仙鸭子、清蒸鸭子糊猪肉攒盘、肉丝清蒸肥鸭旋子、酒炖鸭子……等等。《吕氏春秋·孝行览·本味》:“三群之虫,水居者腥。”鸭肉略带腥气,以酒蒸之,可解腥味,故江南鸭馔调味多用酒。

——制作方法:

将洗净的鸭子切成两半,去掉头尾,放进热水锅里,加入适量盐和葱、姜;水开后,撇去浮沫;大火煮40分钟后,捞出,趁热剔除鸭骨;在案板上铺上一层保鲜膜,将鸭肉放在上面,把酒酿均匀地涂抹在鸭肉上,再用保鲜膜包好,腌制3小时;将腌好的鸭肉切成丁,放入沙锅,再放入剩余的酒酿;将装着鸭肉的沙锅放进蒸锅,用中火蒸90分钟左右;

蒸好后出锅装盘,即可食用。

6、豆腐皮的包子

——《红楼梦》摘录:

宝玉笑道:“好,太渥早了些。”因又问晴雯道:“今儿我在那府里吃早饭,有一碟子豆腐皮的包子,我想着你爱吃,和珍大奶奶说了,只说我留着晚上吃,叫人送过来的,你可吃了?”(第八回)

——考证分析:

豆腐皮,一名豆腐衣。李时珍《本草纲目》云:“豆腐之法,始于汉淮南王刘安。凡黑豆、黄豆及白豆、泥豆、豌豆、绿豆之类皆可为之。”造法:水浸硙碎,滤去滓,煎成,以盐卤汁或山矾汁、或酸浆醋淀,就釜收之。又有入缸内,以石膏末收者。大抵得苦、咸、酸、辛之物,皆可收敛耳。其面上凝结者,揭取晾干,名豆腐皮。“清代以豆腐皮作包子,有数种做法,一、腐皮包裹馅心,如纸包之四折,成方包,以蛋清糊其封口,上笼蒸之;二、用腐皮裁为小片,包馅成兜子,以麻线收口,蒸熟成型,再去麻线。亦有以豆腐切碎,拌调味品为馅,包面以蒸熟。看名称”豆腐皮包子“,似为前者而非后者。豆腐皮包子清代亦为贡品,清宫御膳档案中有此物。”

——制作方法:

豆腐皮包子,就是把豆腐皮包上金针、木耳、青菜、香菇、或猪肉、鸡肉、虾仁,加上油、盐、姜丝、糖、麻油蒸成。

先准备以下食材:豆腐皮800克、糯米300克、火腿100克、香菜梗50克、熟花生仁100克、小葱30克、蒜末10克。调料:精盐5克、味精15克、鸡粉10克、胡椒粉5克、香油15克、色拉油100克。

将豆腐皮洗净,切成小方块;火腿洗净,切成小粒、熟花生仁擀成碎粒;香菜梗洗净,切末备用;将糯米洗净,放入清水中浸泡3小时,再上蒸锅蒸40分钟(每10分钟喷一次水),取出待用;将蒸熟的糯米倒入盆中,加入火腿粒、熟花生仁碎粒、香菜梗拌匀,再放入精盐、味精、鸡粉、胡椒粉、香油、蒜末调好口味,制成包子馅;将豆腐皮平铺在案板上,放入适量馅料,两边向里折,再由下向上卷起,制成长方形生坯;煎锅上火烧热,淋入少许油,放入生坯煎至两面金黄色,即可取出装盘。

7、炸鹌鹑

——《红楼梦》摘录:

《红楼梦》第四十六回写了王熙凤劝邢夫人不要因大老爷先生(贾赦)要娶鸳鸯的事去找老太太(贾母),临了说了一句:“才我临来时,舅母那边送来了两笼鹑,我吩咐他们炸了。”这就是“炸鹌鹑”这道红菜的来历。由於鹌鹑有食补的价值,所以在红菜研制中也大显身手。

——制作方法:

将鹌鹑宰杀,放血,用摄氏68度的热水煺毛,洗净;洗净的鹌鹑从腹部开膛,去内脏,由胸部切1小口,取出气管、食管、食袋,剪去爪尖,用冷水漂洗干净;两翅自趾关节按反方向180度折向脊骨,头与颈拉入左翅腋下,折断腿骨反别入腋下;炒锅置旺火,注入鸡清汤1000毫升,加盐、黄酒、五香粉、胡椒粉、味精,下鹌鹑氽1分钟,起锅控干汤汁,趁热在表皮均匀地抹上一层甜酱油;土豆去皮,洗净,切成细丝,用水漂去淀粉,控干;用四成热油将土豆丝温炸至金黄,摆在盘中央;番茄用沸水烫后,撕去皮,切成花形,拼摆点缀于土豆丝上;炒锅置旺火,注入菜籽油,烧至七成热,下鹌鹑炸至金红色时,起锅控油;9.将鹌鹑胸脯朝上,沿装有土豆丝的盘边摆成一圆圈即成。

8、板栗烧野鸡

——《红楼梦》摘录:

板栗烧野鸡是根据小说中提供的原料而制的一道红菜,味鲜肉美,色泽金黄,为广大美食家所欢迎。(凤姐)拉了李嬷嬷笑道:“好嬷嬷,别生气,......你只说谁不好,我替你打他。我家烧的滚热的野鸡,快来跟我吃酒去。”(第二十二回:王熙凤正言弹妒意林黛玉俏语谑娇音)凤姐笑道:“......连忙把年例给了他们去了,如今来回老祖宗,债主已去,不用躲着了。已备下希嫩的野鸡,请用晚饭去,再迟一会子就老了。”(第五十回)

——制作方法:

板栗烧野鸡将野鸡肉洗净,切成5厘米大小的块,用沸水滚过,去净血沫。肥膘肉切成鱼鳃片,板栗剞十字刀,入锅煮熟,取出剥壳去衣,用油略炸一下备用。冬笋切成滚刀块,香菇去蒂一切为二备用。起锅至旺火上,放入少许花生油,待油热下入葱姜略煸,出香味後放入鸡块、绍兴黄酒煸炒,再加入酱油、盐、糖、鸡精、鸡汤大火烧开,转文火,焖至五六成熟时,放入板栗、香菇、冬笋同烧,烧至酥烂,拣去葱姜、肥膘肉,晃勺收汁,待汁稠时,将鸡块盛在盘中,锅内余汁加点水淀粉,淋上香油浇在鸡块上即成。

9、内造瓜仁油松瓤月饼

——《红楼梦》摘录:

出自《红楼梦》第七十六回。说着,便将自己吃的一个内造瓜仁油松瓤月饼,又命斟一大杯热酒,送给谱笛之人,慢慢的吃了再细细的吹一套来。”

——制作方法:

“用山东飞面作酥为皮,中用松仁、核桃仁、瓜子仁为细末,微加冰糖和猪油作馅。食之,不觉甚甜,而香松柔腻,迥异寻常。”另外如“杨中丞西洋饼”,做法是这样:“用鸡蛋清和飞面作稠水放碗中,打铜夹剪一把,头上作饼如碟大,上下两面铜合缝处不到一分。生烈火烘铜夹,一糊、一夹、一熯,顷刻成饼,白如雪,明如绵纸。微加冰糖、松仁屑子。”

10、冰糖燕窝粥 

——《红楼梦》摘录:

出自《红楼梦》第四十五回。拿上等燕窝一两、冰糖五钱,用银铞子熬出粥来……

冰糖燕窝粥是一道由主料燕窝和大米制作成的食品。燕窝为金丝燕及同属的一些燕鸟在海边岩洞中用其吐出的胶状液体筑成的巢。燕窝性平味甘,入肺、胃、肾经,有养阴润燥、益气补中的功效,可治虚损等症,古列为八珍之一,为历代贡品。

——制作方法:

准备燕窝50克、冰糖25克、大米150克、盐少许;将燕窝用冷水浸泡两个小时后,捞出放在白色的餐碟中,用镊子,检去燕毛和杂质,用清水漂洗几次,漂洗时手要轻,注意保持形状,然后再用凉开水浸泡;使用前倒去水,根据燕窝老、嫩程度分别使用2克或1.5克盐和燕窝拌和均匀,随即用开水一浸,使燕窝涨起;倒去一半水,再用开水浸三四次,至燕窝的体积膨大成原来体积的三倍、手感柔软、可掐断时,再用清水漂洗后,置凉开水中浸泡备用;大米洗净,加适量清水烧开,转小火慢慢熬,熬至八成熟时加入冰糖,待糖融化再把发好的燕窝轻轻放进锅中,略煮几开即成;浸燕窝宜用冷清水,发出来的口感滑溜细致,用热水发浸虽然缩短时间,但口感变粗。

11、笼蒸螃蟹

——《红楼梦》摘录:

出自《红楼梦》第三十八回。凤姐吩咐:“螃蟹不可多拿来,仍旧放在草笼里,拿十个来,吃了再拿。”

——考证分析:

蟹又称无肠公子、含黄伯、郭索、拥剑、执火、彭越等。因其横行又统称螃蟹。螃蟹又分海水和淡水两类。笼蒸螃蟹使用的是淡水蟹,即河蟹,此蟹只能吃活的,其肉鲜美,食时需除去蟹的肠、胃、鳃和脐部。中医认为蟹有散瘀血,通筋络,续筋接骨,解漆毒等功效。但蟹不可以和柿子同食,因为易引起腹泻。蟹性寒,食用时需蘸姜、醋或饮酒,以暖胃怯寒,杀菌消毒。

——制作方法:

准备河蟹、鲜荷叶、马莲、香醋、姜末等食材;将蟹用清水洗净,并将每只蟹的蟹脚用马莲捆牢备用;将鲜荷叶洗净,垫铺在竹笼屉内,将螃蟹脐向下排放在荷叶上,用旺火蒸熟;鲜姜洗净去皮切成细末,和镇江香醋调在一起,装小碗随螃蟹上席蘸食。

12、鸡髓笋

《红楼梦》原文摘录:

出自《红楼梦》第七十五回。鸳鸯又指那几样菜道:“这两样看不出是什么东西来,大老爷送来的。这一碗是鸡髓笋,是外头老爷送上来的。”鸡髓笋是红楼菜中的一道珍品。咸、鲜。脆、嫩且爽口,颜色黄白。它将鸡腿肉去掉,留下骨头,敲碎取出骨髓,点缀在鲜笋盘中,雅致,清透,营养丰富。

——制作方法:

准备云南文山玉指竹笋、乌鸡腿、鸡脯肉、香菜、鸡蛋、鸡油、葱油、盐、绍兴黄酒、糖2克、鸡精、姜汁、清汤、水淀粉等食材;选用文山玉指竹笋12根,用冷水漂洗一下,用餐刀将竹笋竖着一剖两开剔去笋心不用,将竹笋放到开水锅中滚透,再放到汤锅中加入清汤、鸡精、糖煨入味晾冷备用。(香菜去梗选嫩叶洗净备用);将鸡脯肉去皮、去筋,用刀背捶成鸡茸,加入清汤、蛋清、盐、鸡精、葱油顺一个方向搅拌上劲儿,待均匀后备用;取乌鸡腿,用刀剔除腿肉,用刀背将鸡腿骨敲散,用竹签取出骨髓,放至汤锅中加入黄酒、姜汁、糖滚透,去掉腥味,再换清汤煨透,用餐刀将骨髓切成大小均匀的条状;用餐刀在竹笋的笋心内逐个抹平鸡茸,在笋尖上将鸡骨髓点缀上,在笋底部点缀上香菜叶;取一瓷盘抹少许油,将笋逐个放入,加清汤入笼蒸2分钟取出,在盘中拼成花色图案。原汤汁入锅,加入清汤、鸡精调好口味,用水淀粉勾薄芡,淋上鸡油均匀地浇在竹笋上即成。

13、奶油松瓤卷酥 

——《红楼梦》摘录:

出自《红楼梦》第六十二回。只见柳家的果遣了人送了一个盒子来。小燕接着揭开,里面是一碗虾丸鸡皮汤,又是一碗酒酿清蒸鸭子,一碟腌的胭脂鹅脯,还有一碟四个奶油松瓤卷酥,并一大碗热腾腾碧荧荧蒸的绿畦香稻粳米饭……

——考证分析:

“松瓤”是松树子仁,气味芳香,具有润肠通便的功用,可防治老年人习惯性便秘。用面粉加松子、奶油烤制出的酥卷香甜酥脆又适口,卷形蓬松,层次分明。《红楼梦》第41回写贾母嫌螃蟹小饺儿太油腻,便到另一食盒里拣了一样“蒸食”,叫作“松瓤鹅油卷”,尝了一尝,将剩下的半个递与ㄚ环吃了。小说中写的是用鹅油,这与鹅油具有保护皮肤使皮肤柔软白嫩功用有关。研制者考虑到今人的饮食习惯,故采用奶油取代鹅油烤制。

——制作方法:

准备面粉500克、芝麻100克、奶油100克、松仁200克、鸡蛋4个、大油200克、白糖300克、泡打粉、盐各适量等食材;将松仁洗净,焙干擀成碎粒;芝麻漂洗焙干备用;把鸡蛋、大油、芝麻、盐、奶油、松仁、白糖和成馅备用;面粉放和面盆内,四周撒入适量泡打粉,然后分成二份,一份和成水油面团,一份和成油酥面团;将水油面团制剂后包入油酥面团剂,擀成长方形迭成四折,再擀开,约擀成长20厘米、宽8厘米、厚0.5厘米的面片待用;把馅擀成与面皮大小一致的长方形盖在面皮上,对头卷成如意卷形,用快刀切成大小均等的块放入烤盘入炉,烤熟即成奶油松瓤卷酥。

14、红楼茄鲞

——《红楼梦》摘录:

要说最上档次的美味佳肴,当数“红楼茄鲞”,一盘子茄鲞上桌,只见满目金黄色茄块,配以笋丁、香蕈,浓香扑鼻,食之鲜香肥嫩,清新爽口。这道菜,因被中国清代文学大师曹雪芹写进名著《红楼梦》而享誉中外。曹雪芹在《红楼梦》第四十一回里,借凤辣子的嘴,将茄鲞的烹饪法,讲得一清二楚:“你把才下来的茄子皮削了,只要净肉,切成碎丁子,用鸡油炸了,再用鸡脯子肉并香蕈、新笋、蘑菇、五香腐干、各色干果子,俱切成丁子,用鸡油煨干,将香油一收,外加糟油(酒糟调制的油)一拌,盛在瓷罐子里封严,要吃时拿出来,用炒的鸡脯子肉一拌就是。”弄得刘姥姥摇头吐舌:“我的佛祖!倒得十来只鸡来配它,怪道这个味儿。”

——制作方法:

茄子去皮,切丁。浸泡在淡盐水中,可防止茄子变黑;鸡脯肉洗净,切丁,在鸡肉丁中加入两勺水淀粉,用手抓匀,可使炒出来的鸡肉更加的嫩滑;茄丁中加入适量水淀粉,充分拌匀,使切丁都裹上水淀粉;锅中放适量油,平时炒菜的量即可,将茄丁放进去,小火慢慢煎至茄丁表面微焦,即可出锅;锅中再次倒入少许油,将鸡肉丁放进去,大火快速翻炒,翻炒至鸡肉变色,放入葱姜蒜末,炒出香味;把茄丁放入锅内,放入适量盐进行调味,再放入少许白糖,提鲜(盐不宜放太多,后面还要放酱油和蚝油);放入少许酱油、蚝油和适量料酒,拌匀后,即可出锅。

曹雪芹所著的《红楼梦》堪称是一部文学大观园,不仅记录了明清时代的很多生活本相,也从多角度,全方位的剖析了各种领域的文化经典,其中包罗了中国封建社会的物质文化,制度文化和精神文化这三个基本层面,但是所述的细分领域可谓是包罗万象,襄括无遗。

当然,《红楼梦》作为中国的四大名著之一,自然在地位和价值上作所不能及的。《红楼梦》也被誉为是对整个中国古代文化的回顾、总结、浓缩和艺术的表现,是中国封建社会生活文化的集大成者,当然其中的“红楼食谱”也是餐饮文化的开端。

一部《红楼梦》所蕴含的文化精髓,可谓是包罗万象,其中餐饮文化的明清饮食风俗,在其中也是较为详尽的描述了一个时代的风貌,传承至今的“红楼食谱”也是一份不可多得瑰宝,值得每个人去守护。
