椰子鸡
海南作为椰子之乡,椰子鸡自然是要尝试一下的。海南的椰子鸡是文昌特色美食,用新鲜的椰子汁作为汤底,现杀的文昌鸡剁成小块,放入椰子汁中煮5分钟,就可以吃了,文昌鸡的特色是不能久煮,否则肉质会变老,用椰子水做汤底,肉质鲜嫩无腥味,汤鲜柔嫩。吃椰子鸡一定要蘸海南特色蘸料,就是海南什锦酱、蒜末、香菜末、酱油和海南辣椒酱调制而成,最后挤上小青橘的汁,酸甜微辣带有淡淡的清香。椰子鸡有两种,一种用老椰子的椰子水和椰蓉一起打碎,过滤而成,这种汤底是奶白色,椰香味浓郁。还有一种是直接用嫩椰子汁做汤底,比较清澈,但是味道比较清淡,两种汤底各有特色。
